These meatballs get their fun color from a hefty dose of minced spinach or kale worked into the meat. Serve with red sauce and pasta, veggie noodles, or on top of a bed of sautéed greens for a super healthy and kiddo-friendly dinner.
The original inspiration for this recipe came from Beth D., who praised the easy prep and pizza flavor, as well as that it freezes really well. Up the savory flavor with some chopped olives, fresh basil, or even some cured meat for a delicious starter.
Winter time in Cleveland-- during these long months we are surrounded by white and grey, and sometimes our plates turn into similarly monochrome feasts. But there are plenty of beautiful and bright vegetables to be had this time of year, too: all colors of beets, carrots, turnips, squashes and more. Add in a little pop of green from some hydroponically grown baby lettuces (or grow them yourself indoors), a helpful hit of citrus and you're eating a fresh, vegan salad in no time.
